SWEET POTATO CASSEROLE | |
1 can sweet potatoes 1/2 c. butter 1 c. sugar 1 (13 oz.) can evaporated milk 6 eggs 1 tsp. milk 1/2 tsp. cinnamon 1 tsp. vanilla 1/4 tsp. nutmeg 1 (20 oz.) can crushed pineapple, drained 1 c. miniature marshmallows Cube up sweet potatoes; add butter, sugar, milk, eggs, milk, cinnamon, vanilla and nutmeg. Beat with electric mixer until mixture is smooth and fluffy. Add pineapple. Pour into 3 quart greased baking dish. Top with marshmallows. Bake at 375 degrees for 20 minutes. Reduce to 350 degrees and bake 40 minutes. |
