TROPICAL SWEET POTATO CASSEROLE 
6 med. sweet potatoes
1 c. sugar or to taste
1 c. coconut
1/2 tsp. maple flavoring
1 sm. can crushed pineapple, drained
1/4 stick butter, melted
12 marshmallows

Boil, peel and smash sweet potatoes. Add remaining ingredients except marshmallows. Bake at 425 degrees for 20 minutes. Add marshmallows to the top the last 5 minutes of baking time.
