TROPICAL SWEET POTATO CASSEROLE 
4 c. mashed, cooked sweet potatoes
1 c. drained, crushed pineapple
4 tbsp. melted butter
1 tsp. salt
1/4 c. brown sugar
1/8 tsp. cinnamon
1/2 c. coconut

Combine mashed sweet potatoes with 3/4 cup of the pineapple, 3 tbsp. of the butter, salt, brown sugar and cinnamon. Beat well. Heap in a 1 1/2 quart casserole. To rest of melted butter, add coconut and remaining pineapple, mix well and sprinkle over top. Bake at 375 degrees about 40 minutes. Makes 6 to 8 servings.
