MY FAVORITE SWEET POTATO
CASSEROLE
 
6-8 sweet potatoes
1/4 c. butter
1 c. brown sugar
2 egg yolks, beaten
1/2 c. dry sherry
1 tsp. nutmeg
2 egg whites, beaten stiff
Marshmallows (optional)

Grease 2-3 quart casserole. Boil sweet potatoes 30-35 minutes. Cool slightly. Peel and mash. To potatoes, add butter, brown sugar, egg yolks, sherry and nutmeg. Fold into potato mixture beaten stiff egg whites. Bake at 350 degrees for 30-35 minutes. Top with marshmallows last ten minutes. Serves 8.
