GEORGIA'S SWEET POTATOES 
Big cans of yams, drained
Lots of butter
White & brown sugar to taste
2 eggs, separated
Pinch of salt, nutmeg, cinnamon, allspice, ginger & cloves
Cooking sherry or wine
1 tsp. vanilla
12-13 oz. can evaporated milk
Buttered casserole dish
Large marshmallows

Squish yams up in bowl; add butter, sugars, spices and sherry/wine to taste. Add egg yolks and can of evaporated milk until it is a good consistency.

Beat egg whites and fold into above. Pour into buttered pan. Bake at 350 degrees until a crust forms on the top. Take out and top with marshmallows; return to oven until marshmallows are brown.
