RED BEANS AND RICE WITH TURKEY
KIELBASA
 
3/4 c uncooked white rice
1 lb. turkey kielbasa (cut on the diagonal into 1/2-inch slices)
3 cloves, garlic chopped
1 onion, chopped
1/8 tsp cayenne pepper
2 cans (14 1/2 oz) diced tomatoes
1 tsp dried oregano
1/2 tsp dried thyme
2 or 3 dashes Tabasco Sauce, or to taste
2 cans (16 oz) Red Beans drained and rinsed

Cook rice according to pkg. directions omitting any fat and set aside.

Coat a nonstick large skillet with cooking spray and heat over medium heat. Add kielbasa and cook until browned, 2 to 3 minutes. Remove from skillet and reserve. Add garlic, onion and cayenne to skillet - cook, stirring occasionally, until vegetables soften, 4 to 5 minutes. Stir in tomatoes, oregano, thyme, tabasco sauce and water. Cook until sauce begins to thicken slightly, 3 to 4 minutes. Add reserved kielbasa and beans to skillet and cook 2 to 4 minutes or until heated through. Serve over rice.

Serves 4 to 6.

*I mix the rice into the skillet also.
