STRAWBERRY MUFFINS 
1 1/2 c. flour
1/4 c. yellow cornmeal
1/4 tsp. salt
1/4 c. sugar
2 tbsp. baking powder
1 egg
1 c. milk
3 tbsp. melted butter
1 generous c. chopped strawberries

Preheat oven to 400 degrees. Grease 12 cup muffin pan. Sift first 5 ingredients together into large bowl. In small bowl, beat egg, milk and butter. Stir egg mixture into flour mixture just enough to moisten. Fold in berries. Fill muffin cups 2/3 full with batter. Bake 20 minutes or until golden brown.
