STRAWBERRY MUFFINS 
1 - 1 1/2 c. berries washed, hulled, dried (can use frozen, thawed)
3 c. flour
1/2 c. granulated sugar
1 tbsp. baking powder
1 tsp. salt
1/2 c. brown sugar
1/2 c. melted butter
3 eggs
1 c. milk

Sift together flour, granulated sugar, baking powder, and salt. Add brown sugar and stir to blend. Combine butter, eggs, and milk and stir into dry ingredients until just blended. Fold in berries carefully. Pour into greased muffin tins. Bake at 400 degrees for 20 minutes. Makes 20-24.

STRAWBERRY BUTTER:

1 c. butter (room temperature)
3/4 c. frozen strawberries
2 tbsp. powdered sugar

Blend in blender.

Combine eggs and milk separate from your butter. Or else your butter cooks your eggs or your milk makes your butter solidify. Added oatmeal and flax to these. A great hit with toddlers and adults!
