VEGETABLE CHEESE SHELL SALAD 
2 c. cooked vegetable pasta shells
4 oz. mild cheddar cheese, cubed
1/4 c. chopped dill pickle
1/4 c. diced purple onion
1/4 c. green and red pepper, diced
2 tbsp. plus 2 tsp. reduced calorie mayonnaise

Combine all, toss gently and chill at least 1 hour. Add other fresh vegetables if desired.
