WHOLE WHEAT CHOCOLATE SHEET CAKE 
2 1/2 c. whole-wheat flour
1 c. sugar
2 tsp. cinnamon
1/4 c. cocoa
1 c. water
1/2 c. vegetable oil
1 1/2 tsp. baking soda
1 c. buttermilk
2 eggs, beaten
1 tsp. vanilla
Icing (optional)

Preheat oven to 350°F. Mix flour, sugar and cinnamon together in a large bowl. In a saucepan, bring cocoa, water and oil to a boil. Pour over flour mixture and mix 1 minute, scraping bowl. Dissolve soda in the buttermilk, adding to mixture in bowl, along with the eggs and vanilla. Mix an additional 2 minutes. Pour into greased and floured jelly roll pan, 10 x 15 x 1-inch.

Bake 20 minutes. Ice cake, if desired, while it is still slightly warm. Cool cake before cutting.
