FRUIT AND NUT BROWN RICE 
2 1/4 c. water
1 c. brown rice
3/4 tsp. salt
1 lg. apple, peeled and chopped
1/2 c. sliced green onion
1/2 c. sliced pecans
2 tbsp. butter
1/4 c. raisins
1/4 tsp. ground cinnamon

In a 2 quart saucepan mix water, rice, and salt. Bring to boiling. Reduce heat. Cover; simmer 40 to 50 minutes or until water is absorbed. (Rice will be chewy.) While rice is cooking, in a skillet cook apple, green onion and pecans in butter until onion is tender and pecans are toasted. Stir in raisins and ground cinnamon. Toss with cooked rice. Makes 6 servings.
