SUMMER SQUASH 
1 sm. box spaghetti
3 fresh yellow squash, chopped
1 med. green pepper, chopped
1/2 lb. fresh mushrooms, chopped
2 fresh tomatoes, chopped
1/4 tsp. black pepper
1 tbsp. Mrs. Dash seasoning
1 tsp. paprika
1 tsp. parsley
1/2 c. Parmesan cheese
1/4 c. oil

Cook spaghetti as directed on the box. While it's cooking, heat cooking oil in wok or deep frying pan. When oil is hot, add squash, peppers and mushrooms. Add spices to taste, but be sure to be generous with the pepper. This dish should be spicy. Stir fry until vegetables are almost tender. Add the tomatoes for the last few minutes. Drain the cooked spaghetti. Serve onto plates. Top with stir-fry mixture. Sprinkle with Parmesan cheese.
