SUMMER SQUASH ITALIANO | |
2 carrots, thinly sliced 1 onion, chopped 1 clove garlic, minced 2 tbsp. oil 1 lb. zucchini, sliced 1 lb. yellow squash, sliced 2 tomatoes, chopped 2 tbsp. vinegar 1 tsp. salt 1/4 tsp. basil 1/4 tsp. chili powder Dash pepper In large skillet, combine carrots, onion, garlic and oil. Cook, covered, for 5 minutes. Add remaining ingredients. Cover and cook over medium heat for 10 minutes or until vegetables are just tender. Serves 4. |
