SKILLET SQUASH AU GRATIN 
1/4 c. butter
4 c. zucchini or summer squash, sliced thin
1/2 c. grated Cheddar cheese
1/4 c. water or 2 tomatoes, sliced and peeled
1 sliced onion
1 tsp. salt
Dash of pepper
Soy sauce (optional)

Melt butter in skillet. Add squash, onion, salt, pepper, water. Cook covered 12 minutes or until tender. Sprinkle with cheese and a little soy sauce, if desired.
