EASY CHICKEN CASSEROLE 
3 c. boneless cooked chicken breast cut in chunks
1 c. diced celery
1 c. cooked rice
1 can cream of mushroom soup
3/4 c. mayonnaise
1 c. sliced water chestnuts
1/2 c. sliced almonds (toasted)
12 oz. jar diced pimento
1 tbsp. chopped onion
1/2 tsp. salt
1/4 tsp. black pepper
1/4 tsp. cayenne
2/3 c. shredded cheddar cheese
Paprika

Mix all ingredients except cheese and paprika until well blended. Bake uncovered at 350 degrees 40-50 minutes in a 2-quart casserole. Garnish with cheese and paprika during last 10 minutes of baking time.
