BAKED EGGPLANT SLICES 
1 c. mayonnaise
1/2 c. finely chopped scallion or onion
12 frozen unpeeled eggplant slices (1/2" thick)
20 crackers (Ritz), rolled into crumbs

Mix mayo and scallion. Spread on both sides of unthawed eggplant. Dip into crumbs. Preheat oven to 375 degrees. Place eggplant on cookie sheet. Bake 15 minutes. Turn and bake 15 minutes or until golden and tender. Sprinkle with Parmesan cheese.
