BAKED EGGPLANT SLICES 
1 med. eggplant, peeled and sliced 1/2 inch thick
Salt
1/2 c. mayonnaise (regular or low fat)
1 c. soda cracker crumbs
1/2 green onion, finely chopped
1/2 c. Parmesan cheese

Sprinkle slices with salt and let stand 20 minutes, then pat dry with paper towels. Mix mayonnaise and onions and spread on both sides of eggplant. Mix crackers with cheese. Dip slices into mixture. Place on slightly greased cookie sheet and bake at 375 degrees until golden, about 20 minutes.
