BAKED EGGPLANT SLICES 
1 c. mayonnaise
1/4 c. finely chopped scallions (or onions)
12 unpeeled eggplant slices, 1/2 inch thick
Italian flavored bread crumbs

Mix mayonnaise and onion; spread on both sides of eggplant slices. Dip into crumbs and place on cookie sheet. Bake in 375 degree oven for 15 minutes. Turn and bake 15 minutes more or until tender when pierced with fork. May substitute Ritz crackers for bread crumbs.
