BAKED EGGPLANT SLICES 
1 med. eggplant, peeled and sliced 1/2 inch thick
1/2 c. mayonnaise
1/2 c. chopped scallion
1 c. soda cracker crumbs
1/2 c. grated Parmesan cheese

Sprinkle eggplant with salt; let stand for 20 minutes, then pat dry. Mix mayonnaise and onion. Spread on both sides of the eggplant. Mix cracker crumbs and cheese. Dip eggplant slices into mixture. Place on cookie sheet and bake at 375 degrees until golden, about 20 minutes. Serves 4.
