BAKED EGGPLANT SLICES 
2 med. eggplants
1 egg
1/4 c. milk
1 c. crushed cereal flakes
1 tsp. salt
1/8 tsp. pepper
3 tbsp. butter

Peel eggplant, slice 1/2" thick. Beat egg; add milk. Dip slices into egg mix and cover slices well with flakes. Sprinkle salt and pepper on top. Heat butter in large shallow pan. Place slices in pan and bake at 450 degrees for 10 minutes. Turn slices and bake another 5 minutes or until tender. Serves 6.
