VANILLA CAKE 
2 3/4 c. sugar
1 1/4 c. butter, softened
1 tsp. vanilla or lemon extract
5 eggs
3 c. all-purpose flour, not self rising
1 tsp. baking powder
1/4 tsp. salt
1 c. evaporated milk

Heat oven to 350 degrees. Grease and flour tube pan. Beat sugar, butter, vanilla and eggs on low speed, scraping bowl constantly, 30 seconds. Beat on high speed 5 minutes, scraping bowl occasionally. Beat in flour, baking powder and salt alternately with milk on low speed. Pour into pan.

Bake until wooden pick inserted in the center comes out clean 70-80 minutes. Cool 20 minutes. Remove from pan.
