HOLIDAY FRUIT CAKE 
1 1/4 c. sugar
1 c. shortening
4 eggs
1/2 c. strong coffee
1 lb. candied mixed fruit
1 lb. seedless raisins
1/2 c. dried apricots, cut fine
2 c. flour
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. mace
1/2 tsp. allspice
1/2 tsp. cloves

Cream sugar and shortening, add unbeaten eggs with fruits and coffee and mix well together. Add sifted dry ingredients to creamed mixture and beat thoroughly. Bake in waxed paper lined loaf pan in a slow oven (275 degrees) for 2 hours or until done. Place a small pan of water in oven to prevent cakes burning or drying out.
