HOLIDAY FRUIT CAKE | |
1 (9 oz.) pkg. mince meat 2 1/2 c. sifted flour 2 eggs, beaten lightly 2 c. candied fruit 1 1/2 c. water 1 tsp. baking soda 1 can sweetened condensed milk 2 c. chopped walnuts Break mince meat in pieces; put in pan. Add water, stir over medium heat until lumps are broken. Boil 1 minutes, stir once; cool. Butter a 9-inch tube pan. Line with waxed paper, butter again. Sift flour and soda; combine fruit, eggs, mincemeat, milk, and nuts. Fold in dry ingredients; pour in pan. Bake slow (300 degrees) for 2 hours or until center springs back and top is golden. Cool, turn out, and remove waxed paper. |
