MA'S HOLIDAY FRUIT CAKES | |
1 c. salad oil 1 1/2 c. brown sugar 1 tsp. salt 1 tsp. baking powder 1 tsp. cloves 1 1/2 c. whole cherries 1 c. seedless raisins 1 c. diced citron 4 eggs, beaten 3 c. sifted flour 1 tsp. cinnamon 2 tsp. allspice 1 c. pineapple juice 1 c. chopped can pineapples 3 c. chopped walnuts 1 c. chopped figs Mix oil, eggs and brown sugar. Beat for 2 minutes; set aside. Sift 2 cups flour with baking powder, salt and spices. Mix remaining 1 cup flour with fruit, nuts, and raisins. Combine with sugar and flour mixtures. Place equally in 3 greased and floured cake pans. Bake at 275 degrees for 2 1/2-3 hours. |
