FRENCH APPLE PIE 
CRUST:

2 c. flour
1 tsp. salt
2/3 c. shortening
2 egg yolks
3 tbsp. cold water
1 tsp. lemon juice

Sift flour and salt together. Cut in shortening. Blend egg yolks, water and lemon juice together. Sprinkle over dry ingredients. Stir lightly until dough holds together.

Divide dough in half; roll out one half to line pie plate (9 inches). Set aside while preparing filling.

FILLING:

4 c. cooking apples (sliced)
1/2 c. brown sugar
1/2 c. white sugar
2 tbsp. flour
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
2 tbsp. butter

Toss apples with sugar, flour, spices and salt. Fill crust with apples and dot with butter. Roll out remaining dough and top pie. Bake for 10 minutes at 425 degrees, then for 55 minutes at 375 degrees.

FROSTING:

1/2 c. confectioners sugar
1 tbsp. milk
1/4 tsp. vanilla

Combine all frosting ingredients; stir. Frost pie when cool.
