RICE PILAF (LOW FAT) 
1/2 tbsp. unsalted butter
1 tbsp. olive oil
1 sm. onion, finely chopped
1 c. white rice
2 c. hot chicken broth
Salt to taste

Melt butter and oil in a saucepan over medium heat. Add onion and cook. Add rice and cook for 2 minutes. Pour in broth and salt, bring to a boil, stirring. Cover, reduce to low heat, and simmer 18-20 minutes. Serves 3.
