RHUBARB UPSIDE-DOWN CAKE 
1 lb. rhubarb
1 c. sugar
1/2 c. butter
2 lg. eggs
2 tsp. vanilla
2 c. flour
2 tsp. baking powder
1/4 tsp. salt
3/4 c. milk
Rhubarb Sauce
Whipped topping

Heat oven to 350 degrees. Grease 9-inch round pan. Arrange cut-up rhubarb in pan. Sprinkle 1/4 cup sugar over.

Beat butter and 3/4 cup sugar. Add eggs, one at a time. Beat in vanilla. Combine flour, baking powder and salt. Sift over butter mixture. Add milk. Stir until combined. Spoon batter over rhubarb pieces in pan. Bake 35 to 40 minutes or until done. Invert on platter.

RHUBARB SAUCE:

1 lb. rhubarb
1/3 c. sugar
1/8 tsp. cinnamon
Pinch of salt

Thicken with cornstarch, if needed.
