RHUBARB UPSIDE-DOWN CAKE | |
1 1/4 c. sifted flour 1 1/2 tsp. baking powder 1 1/2 c. sugar 1 lb. fresh rhubarb, cut into 1/2 inch pieces 1/3 c. shortening 1 egg 1 tsp. vanilla 1/2 c. milk Preheat oven to 350 degrees. Grease 8x8x2 inch pan. Sift flour and baking powder together. Combine 1 cup of sugar and rhubarb in saucepan. Cook at medium heat for 5-8 minutes. Pour into prepared pan. Beat shortening and remaining sugar until fluffy. Add egg and vanilla. Beat in flour mixture. Spoon over rhubarb. Bake at 350 degrees for 35 minutes. Serve with ice cream. Serves 9. |
