SWEET & SOUR RED CABBAGE 
1 head red cabbage
1/4 lb. (1/2 c.) butter
1/2 c. chopped onions
1/2 c. wine vinegar
2 tbsp. brown sugar
1 tbsp. salt
1/2 tsp. pepper
1 c. water
2 3/4 c. sliced tart apples (Granny Smith)

Shred the cabbage. Melt the butter in a heavy saucepan. Add onions and saute until lightly browned. Add the cabbage and remaining ingredients and mix lightly. Cover and simmer for about 1 1/4 hours. Serves 10 to 12.
