PRUNE CAKE | |
2 c. sifted flour 1 tsp. baking soda 1/4 tsp. salt 1 tbsp. nutmeg 1 tbsp. allspice 1 c. corn oil 1 1/2 c. sugar 3 eggs 1 c. buttermilk 1 1/2 c. coarsely cut cooked prunes 1 c. chopped walnuts 1 tsp. vanilla Sift flour, salt and spices together and set aside. In a large bowl, beat together oil, sugar and eggs; add vanilla. Add dry ingredients; add buttermilk, soda, prunes and nuts. Pour into ungreased 9-inch tube pan. Bake at 350°F for 1 hour. About 15 minutes before cake is done, prepare glaze. Pour hot glaze immediately over cake in pan. When cool, remove. Glaze Topping for Prune Cake: 1 c. sugar 1/2 c. buttermilk 1/4 c. butter 1/4 c. light corn syrup 1/2 tsp. baking soda 1/2 tsp. vanilla Put all ingredients into saucepan. Boil 10 minutes. |
