WATKINS COCONUT CAKE 
5 eggs separated
1/2 c. butter
1/2 c. Crisco
2 c. sugar
1 c. buttermilk
1 c. pecans
2 c. flour
1 tsp. baking soda
2 1/2 oz. coconut
1 tsp. vanilla
1 tsp. coconut flavoring

Beat egg whites and set aside. Cream shortening, sugar, egg yolks until creamy. Add soda, buttermilk and flour. Fold in coconut and nuts until well blended. Now fold in egg whites until well mixed. Bake at 325 degrees until done.

ICING:

8 oz. cream cheese
1 lb. powdered sugar
1 stick butter
1/2 tsp. vanilla

Beat well. Sprinkle with coconut or pecan halves or maraschino cherries.
