SQUASH CASSEROLE 
2 c. cooked squash
1/4 c. butter
1/2 c. sour cream
1 sm. minced onion
1/2 c. grated mild cheddar cheese
1 egg, well beaten
Salt & pepper to taste
(Optional: bread or cheese topping)

Combine all ingredients except topping and mix well. Pour into a 1 1/2 quart casserole dish. Bake at 325 degrees until hot and bubbly (about 20 minutes). If desired, a topping of buttered bread crumbs or grated cheese can be placed on the casserole just before removing from the oven.
