BUTTERNUT SQUASH CASSEROLE 
2 c. drained, mashed butternut squash
6 tbsp. butter
1 c. sugar
1 c. milk
3 eggs
1/2 tsp. ginger
1/2 tsp. coconut flavoring

Combine all ingredients; place in greased casserole. Place casserole in pan of water. Bake in preheated 350 degree oven for about 45 minutes or until knife inserted in center comes out clean.
