SQUASH CASSEROLE 
2 lbs. (6 c.) zucchini, sliced
1/4 c. chopped onion

Boil in salted water for 5 minutes. Drain well.

1 can condensed cream of chicken soup
1 c. sour cream
1 c. shredded carrot

Combine and add to above. For large quantity double all of the above.

2 boxes Stove top stuffing
2 sticks butter

Combine stuffing mix and butter, spread half in bottom of baking dish. Spoon vegetable mixture on top. Sprinkle remaining stuffing over vegetables. Bake at 350 degrees for 30 minutes.
