SPINACH WITH GARLIC AND ROSEMARY 
2 cloves of garlic, finely chopped
1 tbsp. of olive oil
1 1/2 lbs. fresh spinach, rinsed, stems removed, and leaves torn into bite sized pieces
1 tsp. dried rosemary leaves, crushed
Freshly ground black pepper

In a large microwave safe bowl combine garlic and oil stir spinach and rosemary into garlic and oil. Cover with paper or plastic and microwave on high for 5 minutes. Stir well until spinach is wilted, season gently with pepper and serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
