JEFF'S SPINACH SALAD WITH GARLIC
DRESSING
 
Spinach leaves (enough to fill a large salad bowl)
1 c. Mozzarella cheese, shredded
1/2 lb. bacon, cooked and crumbled
4 hard boiled eggs, finely chopped

Wash and dry spinach leaves and toss together with other ingredients. Set aside until ready to serve.

GARLIC DRESSING:

4 tbsp. sour cream
1 tsp. dry mustard or 1 tbsp. Dijon mustard
1 tsp. sugar
2-3 tbsp. red wine vinegar
3-4 cloves minced garlic
Salt and pepper to taste
1/2 c. oil

Whisk together all ingredients except oil. Add oil in a very slow stream while whisking until all oil is mixed in. Must be done slowly or dressing will separate. Let stand at least 1 hour before mixing into salad.

This amount is for true garlic lovers - less can be used.

Jeff's spinach salad has been my holiday favorite since I located it! The tastes meld for a savory experience and the vinagrette emulsifies to make a perfect dressing that please even the non-garlic lover. My only changes include a bit less egg and blackberries that add an interesting sour/sweet crunch and a clove or 2 of garlic very finely chopped.
