PEACH CAKE | |
2 c. flour 1 tsp. salt 4 tsp. baking powder 1/3 c. shortening 1/2 to 2/3 c. milk (to make soft dough) 6-8 fresh peaches 3/4 c. sugar 1/2 tsp. salt 1/2 tsp. cinnamon 2 tbsp. butter Sift together flour, salt, baking powder. Cut in shortening. Stir in milk. Round up dough on light floured board. Knead lightly. Roll out dough until 1/8 inch thick; pat into a 9x13x2 inch pan that has been lightly greased. Slice peaches and fill dough with them. Mix sugar, salt, and cinnamon together; sprinkle over peaches. Dot with butter. Bake 10 minutes at 450 degrees, then at 375 degrees for 15-20 minutes longer. |
