Crazy Aunt Moo's "I Married A
Greek" Orzo Salad
 
1 (16 oz.) box Orzo
1 container Baby Spinach
3/4 container Cherry or Grape Tomatoes
Approximately 2 oz. Pine Nuts, browned
2/3 cup Olive Oil
Salt and pepper to taste

1. Cook box of orzo, set aside.

2. Wash and chop spinach.

3. Rinse tomatoes.

4. Brown pine nuts in olive oil.

5. Mix spinach, tomatoes and pine nuts with orzo in large bowl.

6. Add olive oil and salt and pepper.

7. Toss and enjoy.
