BEEF TYROLEAN | |
1 (5 lb.) filet of beef Salt and pepper 1 clove garlic, pressed 2 tsp. butter 1 lg. onion, chopped 1/2 c. celery, chopped 1 carrot, chopped 3/4 lb. Swiss cheese, grated Preheat oven to 400 degrees. Remove all fat and sinew from beef. Slash filet lengthwise one side and open out, butterfly style. Sprinkle meat on all sides with salt and pepper. Rub with garlic. In a small skillet heat butter to medium and saute onions, celery and carrots until soft and lightly browned. Spoon mixture onto cut surface of the meat. Sprinkle half of cheese over vegetables. Fold over meat and fasten with string and toothpicks. Place in a shallow pan. Roast for 40 minutes. Remove strings and toothpicks. Place remaining cheese over meat and roast for 5 minutes. Slice thick and serve. Serves 6. |
