“TANGY APPLE SALAD” IS IN:
NEXT RECIPE:  THREE BEAN SALAD

TANGY APPLE SALAD 
DRESSING:

2 tbsp. sugar
2 tbsp. sliced green onions
1/2 tsp. grated orange peel
1/8 tsp. salt
1/3 cup olive oil
1/4 cup orange juice
3 tbsp. lemon juice

In small jar with tight-fitting lid (or Cruet), combine dressing ingredients; shake vigorously. Set aside.

SALAD:

1 medium green or yellow apple, cored and cut into 16 wedges
1 medium red apple, cored and cut into 16 wedges
leaf lettuce

In medium bowl, toss apples with 2 tablespoons of dressing. Arrange 8 apple slices on each of 4 lettuce lined plates. Serve with remaining dressing.

Serves 4.
