RIZ AU LAIT 
1 c. rice, cooked
3/4 c. sugar
4 eggs
2 c. milk
1 tsp. vanilla

Cook rice very soft. Then add it to the milk. (Rice previously cooked and "leftover" may be used.) Let the rise and milk come to a rolling boil. Beat the eggs and sugar together thoroughly until very light. Add to the boiling rice and milk. Cook for an additional minute. Remove from the fire and cool. When it has cooled, add vanilla. Place in dish and place it in refrigerator. It may be served with cinnamon or nutmeg sprinkled on top.
