COUNTRY CLUB SQUASH | |
8 med. yellow squash, sliced 1/2 c. chopped onion 1 (8 oz.) carton sour cream 1/2 tsp. salt 1/4 tsp. black pepper 1/4 tsp. basil 1 c. soft bread crumbs 1/2 c. Cheddar cheese, grated 1/3 c. butter 1/2 tsp. paprika 8 slices bacon, cooked and crumbled Cook squash and onion in boiling salted water until tender and drain. Combine squash, onions, sour cream, salt, pepper and basil. Pour into 2 quart casserole dish. Next combine bread crumbs, cheese, butter and paprika. Sprinkle over squash mixture. Top with bacon. Bake 30 minutes at 300 degrees. |
