MANICOTTI 
1/2 lb. Italian sausage
1/2 c. chopped onions
1/4 c. chopped green peppers
1 (29 oz.) can tomato sauce
Salt, pepper, oregano, basil and garlic
2 c. Ricotta cheese
1 c. shredded Mozzarella cheese
1/4 c. Parmesan cheese
1 egg
6 to 8 cooked and drained Manicotti shells

Remove skin from sausage. Brown sausage with onions and green peppers. Drain off excess fat. Stir in salt, pepper, oregano, basil and garlic to taste together with tomato sauce. Boil gently uncovered for 15 minutes.

Combine Ricotta cheese, Parmesan cheese, 3/4 cup Mozzarella cheese, egg and a little pepper. Cook Manicotti shells according to package directions. Drain and fill with cheese mixture.

Pour half of sauce in a 12 x 7 1/2 x 2 inch baking dish. Place stuffed shells in sauce. Cover with remaining sauce and top with 1/4 cup shredded Mozzarella cheese. Bake in a 350 degree oven for 20 to 30 minutes.
