GOLDEN CAULIFLOWER 
1 head cauliflower
1 egg white
1/3 to 1/2 c. mayonnaise
4-6 oz. Swiss cheese, grated
1 tbsp. lemon juice

Divide cauliflower into clumps. Blanche for no more than 10 minutes. Whip the egg white; fold in the mayonnaise and Swiss cheese. Spread the flowerets into a 9x12 inch glass pan. Spread the egg, mayonnaise, cheese mixture over the cauliflower and top with grated Parmesan cheese. Bake for 30 minutes at 350 degrees or until the topping is golden in color.
