NANCY'S NUTRITIONAL CAULIFLOWER
AND PEA SALAD
 
1 head cauliflower, cut into flowerettes
1 c. celery, cut up
3 hard boiled eggs, chopped
2 carrots, shredded
1 c. Cheddar cheese, cubed
1 frozen box peas (8 oz.) (thawed partially)
1 sweet and sour dressing (Marzetti's)
1/2 onion, chopped - optional
2 chicken breasts, cubed (optional)

Mix all ingredients together (except peas) with dressing. Let set for 1 hour. Add the peas. Put in bowl and garnish with shredded Cheddar cheese (about 1/2 cup).

May use red French/or Italian dressing mixed together as another choice of dressing. Keep refrigerated. Last 2 or 3 days.
