NEW ENGLAND PEA SALAD | |
1 lg. head lettuce 8 strips bacon 1 regular size can of sweet peas 1 c. grated Colby Jack cheese 5 tbsp. mayonnaise Rinse and drain head of lettuce. Cut up for salad. Fry bacon until crisp. Set aside on cloth to drain. After bacon cools, crumble and set aside. Drain all juice from peas. Alternately layer lettuce, cheese, peas and bacon in serving dish and chill. Prior to serving toss with mayonnaise. For presentation purpose reserve 1 tablespoon of cheese and 1 tablespoon of bacon to sprinkle on top of salad before serving. |
