GERMAN POTATO SALAD 
6 slices bacon, chopped
1/2 c. chopped green onion
1/4 c. white vinegar
2 tbsp. sugar
1 tsp. salt
6 med. potatoes (about 2 1/2 lb.), peeled & cut into 1/4" slices
1/4 c. water

1. Place bacon and green onion in small bowl or 1 quart casserole; cover. Microwave at high (100%) until bacon is light brown, 5-7 minutes. Stir in vinegar, sugar and salt. Set aside.

2. Place potato slices and water in 2 quart casserole; cover. Microwave at high (100%) until potatoes are fork-tender, 10-15 minutes, stirring after half the cooking time. Drain. Pour bacon and vinegar mixture over potato slices. Toss to coat. Makes 4-6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
