SPINACH BALLS 
2 pkgs. (10 oz.) frozen chopped spinach, cooked and drained well (squeeze by
hand)
2 c. packaged stuffing mix
1 c. grated Parmesan cheese
6 eggs, beaten
3/4 c. softened butter
Salt and pepper to taste

Combine all ingredients, mixing well. Roll into balls the size of walnuts. Freeze on a cookie sheet. Store in freezer bags.

To serve - bake on cookie sheet still frozen. Bake 10-15 minutes at 350 degrees. (If you don't cook spinach beforehand bake 30 minutes at 350 degrees.)
