CREAMY BROCCOLI SOUP 
1 bunch fresh broccoli, coarsely chopped
3 c. beef stock
1 med. onion, chopped
4 tbsp. butter
4 tbsp. flour
1 tsp. salt
1/2 tsp. pepper
2 c. milk
2 c. diced potato (optional)

In a large saucepan, bring beef stock to boil. Add broccoli and onion and cover. Cook until tender. Make white sauce with remaining ingredients, when thickened, set aside. Put half of broccoli mixture into blender and puree. Pour back into broth. Add white sauce.
