TEMPURA 
8 shrimp (about 3 inches long)
1/2 broccoli
1/2 pumpkin
1 onion
1 qt. vegetable oil to deep fry

BATTER:

1 egg
1/3 c. ice cold water
1/2 c. flour

Mix together egg and water. Add flour and stir only until mixed. Do not over mix. It will be lumpy. Set aside.

Cut vegetables into 1 1/2 or 2 inch bite-size pieces. Shell the shrimp but leave on the tail. Set aside.

To deep fry, use large heavy pan and fill about half full with oil. Bring up to 370 degrees. Dip the shrimp and the vegetables into the batter a few at a time, cook 3 minutes until golden brown and remove. Drain. Serve hot with Tempura Sauce, recipe below. Makes 4 servings.

Other seafood or vegetables may be substituted.

TEMPURA SAUCE:

1/4 c. soy sauce
1/4 c. Mirin sauce
3/4 c. of 1 c. fish flavored soup (Miso)

Combine ingredients and serve with the shrimp.
